My Great Passion, In Your Backyard

My name is Anthony Beran – director and pitmaster of Up in Smoke. Up in Smoke delivers my love for BBQing to your own backyard. I offer an authentic and boutique catering experience. I take an enormous amount of pride in the quality of my produce, preparatory marinades, and final flavour. Bringing these elements together is the theatre of my cooking. I casually exhibit and narrate the story of everything I cook to your guests. My BBQ equipment is premium quality and meticulously maintained. I can also serve your guests, provide crockery and cutlery if necessary, and will clean my entire BBQ area. The Up in Smoke experience is inspired by my Greek heritage, and influenced by my beautiful partner’s Uruguayan roots.

The value of Smoking

For those new to smoking and making barbecue, simply put, it’s slow cooking a piece of meat at a very low temperature while burning hardwood in the form of chips, chunks, or logs. For pieces of meat like pork shoulders or brisket, this process breaks down the fat and connective tissues that would otherwise make the meat tough, leaving nothing but tender, juicy, smokey goodness behind. This is why I BBQ my meats for up to eight hours. I’m often asked by friends and clients why on earth I begin my BBQing process in the wee hours of the morning. It’s a great feeling allowing my food to provide the answer – rich flavour and heavenly texture. I also use other techniques such as Uruguayan Asado (open flame grilling) and Mediterranean Rotation (on the rotisserie using charcoals). There is great theatrical value in these techniques, and I’m more than happy to BBQ at your party using any combination.

This is a family business. I am am the caterer and pitmaster, and my brother PJ is the Business Development Manager. We work together to ensure that our guests are 110% satisfied with the experience we provide.

Capacity

Up in Smoke can provide all cooking, eating, and cleaning equipment for up to 200 people, as well as vibrant salads and sides home-made by my mother and assistant chef, Chris. Up in Smoke is fully insured and is a registered business (ABN: 65282145020). Up in Smoke also holds Food Supervisor certification under the Food Act 2003 (NSW) by attaining SITXFSA201 (Use Hygienic Practices for Food Safety) and SITFSA101 (Participate in Safe Food Handling Practices).
